YES, Why yes it can. Diary- Free and Keto Friendly? YES!

I know it sounds like a Myth, but honestly with just a little preparation you can have "your cake and eat it too". ; )

There are some days that you really just need a good old bag of Doritos and a Kitkat bar to say TGIF! And thats alright too, but if you are like me and crave junk food more than once a week I'll show you some recipes I've made for a comfort Movie night in.

The obvious first choice for me is usually popcorn to get my night started. I have developed a Dairy intolerance and it is on going visits to the doctor, antibiotics etc. until we come to end of why I have been in pain.

I LOVE my Air PopCorn machine. If you haven't used one, it will change your life.

(No oil, just the calories from the Kernels, which is 31 Calories per cup.) This is my Air PopCorn Machine that I own in the UK. I ordered it off of Amazon for 11GBP I believe, and they gave me some popcorn Kernels. Best investment. let's say you go to the Movie theatre and spend 8GBP on one bag of Popcorn, or $10 CAD on a bag of Popcorn. You've returned your investment by your second visit.

A little secret, Movie theatre popcorn (as long as you do not add butter) is VEGAN... Thats correct, VEGAN. Made with Vegetable oil or as they call it in the UK Rapeseed oil.

If I want the Movie theatre experience at home with WAY less calories, I add vegetable oil and Himalayan Sea Salt.

Himalayan sea salt detoxifies the body by balancing systemic pH. Improves hydration by providing trace minerals. Improves mineral status of the body. Reduces muscle cramps by improving minerals and hydration. Helps balance blood sugar. (https://empoweredsustenance.com/himalayan-salt-benefits/) The list goes on and on. This is the only salt I keep in our cupboards.

-In a later Blog Post I will share my healthier recipes for Air-popped popcorn. -

Movie nights start with Dinner, right?

Turkey Burgers! Keto and Dairy-free friendly.

For the lettuce wraps you can use anything you'd like. I prefer round lettuce in the UK and Boston Lettuce in Canada.

I sliced up tomatoes added a bit of mayonnaise, hot sauce and Jalapeños. Toppings are totally up to you and your diet. Peanut butter is another GREAT condiment.

Turkey Burger recipe:

1 Package of Ground Turkey

2 fine chopped portobello mushrooms (any mushrooms will do)

1 Large Egg

1 TBS of Smoked Paprika

1Tsp of Garlic Powder

1/4 tsp Himalayan Salt

1/2 tsp of Oregano

1/4 Tsp Cayenne Pepper

2tsp of Olive Oil

Mix in large bowl.

On a small piece of aluminium foil, add a large scoop of the turkey mixture in the centre of the foil. Fold the foil to the edge of burger so its nice and tight keeping the form nicely while cooking. I add low sugar BBQ sauce on top of the patty before folding the foil.

Brussel Sprouts & Bacon: Keto & Dairy-Free Friendly

A sweet and crunchy side:

2 Rashers of Bacon chopped with a TBS of Coconut oil. Cook and stir often until the bacon is cooked. Add Brussel sprouts. Stir until mixed and let sit for a few minutes until browned on one side. Then stir and let the other side to brown. Turn down to simmer for 10 Minutes.

And finally Snacking while watching the movie:

Guacamole Recipe: Dairy-Free and Keto Friendly

3 Lrg Avocados (ripe, buy them a day or two in advance, leave out)

1 Small Red Onion

1 Tomato (leave out, for maximum taste)

1 Jalapeño (chopped and seeded, wear gloves)

2 TBS Garlic Powder

1/2 tsp Himalayan Salt

1/4 Tsp Cayenne Pepper

1/2 Tsp Cracked Black Pepper

1 TBS of Dried Cilantro

1 TBS Olive Oil

Juice of 1 Lime or Juice of 1/2 a lemon

Keep the Pitts! Add the pits to the guacamole once prepared, it will help keep the Guacamole fresh.

Add ingredients minus the olive oil and mix. Take about one cup of the mixture and the olive oil to a blender. Then add both mixtures together. Place in a serving dish with the pits added to the top.

The chips for dipping are Protein, Keto friendly wraps.I simply took a wrap and place it on a pan in the oven at 400 degrees F or 200 degrees C, for 4.5 minutes(no grease, yay). I placed the wrap on a rack to cool down as the rack allows for air to move below and above the wrap eliminating condensation for optimal crunch. I took a pair of kitchen scissors and cut the wraps down the middle, then into triangles. A healthier option with way less sodium then Original Tortillas.

For my sweet tooth craving I picked up my favourite dairy-free treat. A Heidi, Dark Chocolate Pistachio bar. The pistachios take away the bitter tart taste that you might have previously experienced with dark chocolate. The pistachios also add a slight more crunch to the bar!

Enjoy your Movie nights!

Sincerely,

Celine
